Lobo is the product of Michael Stafford and Warwick Billings, Michael’s family has been growing apples for generations and Warwick, the cider maker behind this exquisite range, is originally from Somerset, the cider capital of the UK. He has been involved in making cider since he was 8 and once made a cider that was regarded as the finest in England at the time.
"We don't filter out the apple. This cider is made from crushed apples that are allowed to settle briefly and then begin to ferment. After a period we add some cultured yeast and then continue the long cool fermentation. At the right moment the fermentation is arrested capturing the full length and depth of flavour that characterises LOBO and the cloudy wholesome cider is then put into bottles. A natural apple and yeast sediment is present in the bottle."
Lobo means wolf in Spanish and Portuguese and is also a rare variety of apple - this is the reason behind the quirky wolf illustrations on all our labels. Each label has been designed by a different artist and the wolf embodies the characteristics of the drink itself.

All cider makers secretly or not so secretly really want to make Apple Brandy.
Apple Brandy is most well known as Calvados - the French name for the region that well known examples
come from in Normandy, Northern France.
We make some Lobodos, our Australian interpretation of this delicious drink.
It takes a while, best matured in oak barrels for at least 3 years.
The result is a complex full flavoured apple brandy (although we prefer the name lobodos),
with rich nutty and caramel notes supporting the apple base line.
So while we were waiting we started occasional releases of a clear apple spirit -
LOBO Apfel, a simpler younger eau de vie,
made in a more central European dry Schnapps style.
And then we decided to make a Gin.
Part of our gin comes from the orchard, we use the aromatic yellow skin of Quinces that Michael grows, and after a period of maceration we distill these with the other more traditional botanicals, headlined by Juniper, and the result is delicious, and slightly different, in a delightful way.
We called our Gin - LOBO Djinn - djinn being the origin of the word genie, meaning something along the lines of an animal spirit.
Sort of a pun on a spirit in a bottle, if you look through the star on the front of the label, the spirit lives inside.

LOBO TRAD - 330ml
LOBO Trad, cloudy cider made from a blend of special cider apples and eating apples. Darker in colour than our regular cloudy apple, fuller flavour, a little drier.
A bit more traditional - Trad.
Full apple flavours, toffee apple notes, crisp acid, clean finish with structure and a little tanin and a hint of bitterness (in the nicest possible way!)
Like all of our ciders Trad has a natural apple and yeast sediment in the bottle, pour carefully for a clear cider or rouse the bottle, roll gently, some even shake. The flavour changes - try it and see which you prefer.
LOBO APPLE CIDER - 330ml

Pouring LOBO cider, excellent over ice - invert the whole bottle. It can also be rolled gently or poured carefully leaving the sediment in the bottle, each method giving different levels of clarity. The flavour changes, experiment and see which you prefer.
LOBO APPLE & PEAR CIDER - 330ml
Full flavour, slightly lighter and fruity, plenty of apple softened with 20% pear, delicious
Preservative and Gluten Free
LOBO CYSER - 330ml
LOBO Cyser, cyser is the old name for a mead made with apple juice. Mead is a traditional alcoholic drink made using fermented honey. We get some honey from a neighbour who keeps bees and blend it with some apple and quince juice to produce the LOBO cyser. There is a secret mix of herbs and spices in the recipe as well.
The result is a quite sweet, slightly sparkling drink that will surprise you. The apple and quince moderate the honey sweetness, and give a rounder flavour. Honey flavours, with some floral and a difficult to identify fruitiness. Delicious "after dinner" cider, but pretty good with ice on a warm afternoon.
LOBO ROYALE - 750ml
LOBO Royale is our flagship small batch cider, again it is partially keeved, made with a mix of our cider apples and some of our LOBO base blend. A greater proportion of Somerset Red Streak has kept the alcohol lower 3.8% ABV, and resulted in a more "french doux" style.
By stopping with residual sweetness the apple flavour is retained and quite pronounced, but the cider apples bring a gentle tanin structure and finish, which balances this with enough acidity to balance the sweetness. The apple flavours follow and last in the mouth, quite delicious.
Bottle conditioned, preservative and gluten free. Its good with It's a delicious food cider - try with roast pork, lots of different cheeses, but it's just as good by itself!
The Royale is no cheeseburger, but it has a lot going on.
LOBO NORMAN - 750ml
LOBO Norman is a small batch cider, made in a more European style - we make it using our traditional English cider apple varieties, apples with names like Kingston Black, Dabinett, Yarlington Mill. We sometimes use some carefully selected edible crab apples, and have been known to use an apple called the Winter Banana! Pink Ladies and Golden Delicious make it in sometimes as well. The cider apples bring tanin and structure, along with more complex apple and almost spicey flavours.
Bottle conditioned, preservative and gluten free.
It's a delicious food cider - try with roast pork, lots of different cheeses, but it's just as good by itself!

LOBO APPLE BRANDY 41.6% 700ML
Lobo Cider started with some of their lovely cider, a conversation with a renowned whiskey maker, and a bit of dreaming.
Sometime later with cider double distilled in the copper pot, then aged in French oak barrels for three years, and careful blending, they are proud to release a superb South Australian Apple Brandy.
In France apple brandy is known as Calvados. You can call this one Lobodos! Twice the wolf.
LOBO APFEL - 700ml
LOBO Apfel is our first foray into apple spirit.
Starting with some of our LOBO cider, our good friend Ian at Iniquity Whisky has double distilled the cider to produce a clear spirit in the Schnapps style.
Some apple notes and a smooth soft palate.
Traditionally Schnapps is often drunk as a shot, but it also makes a good aperatif, or goes very well with a coffee after a meal. The options in cocktails are limitless!
LOBO Gin - Djinn 500mL
Our Orchard Gin - we took out the citrus and substituted quince, aromatic, but in a slightly different way. We grow quinces, but not so much citrus here in Lenswood, the apple capital of the Adelaide Hills.
Backed up by a pure Juniper note, juniper is essential for a gin, and supported by a blend of botanicals with spices and some other etheral notes to give a complex and enjoyable gin.
Drinks well neat, the classic G+T, and with the juniper character stands up in cocktails.
Our cidermakers favourite is a simple gimlett with straight lime juice.

Section 28 Cheeses
Kym uses some of our award winning Norman cider to create his IL LUPO cheese, a semi hard alpine style cheese with rind and character, and its smaller sibling the Section 28 Perry, by washing the cheeses in cider as they mature the outside rind of the cheese changes, and while it doesn't taste of cider it has a very enjoyable rind, with complex nutty flavours that go well with the firm cheese inside.
Tin Shed Distillers
Ian at Tin Shed Distillers is becoming well known for his renowned Australian Whiskies, sold under the Iniquity brand. We got chatting and it turned out he had a longstanding interest in cider. A bit (actually quite a lot) of distillation later and our cider twice distilled through the copper pot still has produced the LOBO Apfel, as a schnapps style clear spirit, for drinking in shots or cocktails.
We also have some wood aged Australian Apple Brandy that is maturing away – watch this spot.....
Steven ter Horst chocolatier
How do chocolate and cider go together? Well actually Steven makes a quite delicious chocolate called the 'Eliza' with some Quince juice that we make for him. Quinces are somewhere between apples and pears and a bit of a South Australian favourite, so why not. Delicate but definitely delicious. He is also working on an Apple Brandy Chocolate – yes yes yes.
Al makes some of the best beer in South Australia and he's go the awards to prove it. What can we do with apples and beer we thought? Turns out that apples are best left in cider, but quinces go very nicely in a beer – and the Quale was born, a quince ale of course, quite beery but with a twist of quince.
Not all of these lovely things are always available,
or for that matter necessarily easy to find,
but if you love good food and drink they are well worth seeking out.
And if you can't find the LOBO collaboration,
everything else that these guys make is well worth a try!
We don't have a cellar (or cider house) door at the moment. But we do have a stall at the Adelaide Showground Farmers Market, (Leader St, Goodwood, SA), we're there on the first Sunday of every month.
