LOBO CIDER
Our ciders are cloudy, unfiltered, undiluted and 100% authentic. Crafted in the Adelaide Hills by a 5th generation apple grower teamed with a Somerset Cider Maker – real apples, real taste for real people.
Lobo is the product of Michael Stafford and Warwick Billings, Michael’s family has been growing apples for generations and Warwick, the cider maker behind this exquisite range, is originally from Somerset, the cider capital of the UK. He has been involved in making cider since he was 8 and once made a cider that was regarded as the finest in England at the time.
"We don't filter out the apple. This cider is made from crushed apples that are allowed to settle briefly and then begin to ferment. After a period we add some cultured yeast and then continue the long cool fermentation. At the right moment the fermentation is arrested capturing the full length and depth of flavour that characterises LOBO and the cloudy wholesome cider is then put into bottles. A natural apple and yeast sediment is present in the bottle."
Lobo means wolf in Spanish and Portuguese and is also a rare variety of apple - this is the reason behind the quirky wolf illustrations on all our labels. Each label has been designed by a different artist and the wolf embodies the characteristics of the drink itself.

All cider makers secretly or not so secretly really want to make Apple Brandy.
Apple Brandy is most well known as Calvados - the French name for the region that well known examples
come from in Normandy, Northern France.
We make some Lobodos, our Australian interpretation of this delicious drink.
It takes a while, best matured in oak barrels for at least 3 years.
The result is a complex full flavoured apple brandy (although we prefer the name lobodos),
with rich nutty and caramel notes supporting the apple base line.
So while we were waiting we started occasional releases of a clear apple spirit -
LOBO Apfel, a simpler younger eau de vie,
made in a more central European dry Schnapps style.
And then we decided to make a Gin.
Part of our gin comes from the orchard, we use the aromatic yellow skin of Quinces that Michael grows, and after a period of maceration we distill these with the other more traditional botanicals, headlined by Juniper, and the result is delicious, and slightly different, in a delightful way.
We called our Gin - LOBO Djinn - djinn being the origin of the word genie, meaning something along the lines of an animal spirit.
Sort of a pun on a spirit in a bottle, if you look through the star on the front of the label, the spirit lives inside.

Section 28 Cheeses
Kym uses some of our award winning Norman cider to create his IL LUPO cheese, a semi hard alpine style cheese with rind and character, and its smaller sibling the Section 28 Perry, by washing the cheeses in cider as they mature the outside rind of the cheese changes, and while it doesn't taste of cider it has a very enjoyable rind, with complex nutty flavours that go well with the firm cheese inside.
Tin Shed Distillers
Ian at Tin Shed Distillers is becoming well known for his renowned Australian Whiskies, sold under the Iniquity brand. We got chatting and it turned out he had a longstanding interest in cider. A bit (actually quite a lot) of distillation later and our cider twice distilled through the copper pot still has produced the LOBO Apfel, as a schnapps style clear spirit, for drinking in shots or cocktails.
We also have some wood aged Australian Apple Brandy that is maturing away – watch this spot.....
Steven ter Horst chocolatier
How do chocolate and cider go together? Well actually Steven makes a quite delicious chocolate called the 'Eliza' with some Quince juice that we make for him. Quinces are somewhere between apples and pears and a bit of a South Australian favourite, so why not. Delicate but definitely delicious. He is also working on an Apple Brandy Chocolate – yes yes yes.
Lobethal Bierhaus
Al makes some of the best beer in South Australia and he's go the awards to prove it. What can we do with apples and beer we thought? Turns out that apples are best left in cider, but quinces go very nicely in a beer – and the Quale was born, a quince ale of course, quite beery but with a twist of quince.
Not all of these lovely things are always available,
or for that matter necessarily easy to find,
but if you love good food and drink they are well worth seeking out.
And if you can't find the LOBO collaboration,
everything else that these guys make is well worth a try!

We don't have a cellar (or cider house) door at the moment. But we do have a stall at the Adelaide Showground Farmers Market, (Leader St, Goodwood, SA), we're there on the first Sunday of every month.
